Okay Clover seems to be working - I had to switch my display cable from HDMI to DisplayPort - I guess when the Apple logo was showing it was switching graphics to DisplayPort as the default? As I have EGPU connected to DP and IGPU want to connect to HDMI, so when I boot windows its on DP (EGPU) and when I boot Big Sur its on second monitor via HDMI (it has no DP connection).
