Can boot installer but not OS?

Using the EFI attached (I removed serial numbers) I've been using Catalina for a while now. I decided to try Big Sur Beta so I made an installer using the same EFI. The install booted and installed but when it tries to boot into the OS for the first time it gets up to an NVME error and then reboots.

How does Catalina and the USB installer work fine but not the final os?
